Each of our four veg biryanis is built around a different main ingredient and a different flavour profile, the same way our non-veg biryanis are.

How Our Veg Biryani Is Made
- Prep the base. Basmati rice is washed and par-cooked with whole spices โ cardamom, cinnamon, bay leaf โ so the grains stay separate and fragrant.
- Cook the main ingredient separately. Paneer, vegetables, or stuffed eggplant is cooked in its own masala first, so the flavour is fully developed before it meets the rice.
- Layer it. Rice and the cooked filling go into the pot in alternating layers, finished with saffron milk and fried onions.
- Dum cook. The pot is sealed and slow-cooked on low heat (the “dum” method), letting the steam finish the rice and pull all the layered flavours together.
